An interdisciplinary examination of the global food system – from agriculture, processing, distribution, consumption and waste management to social, political, economic and ethical issues. The course explores a variety of discourses, policies and practices that seek to promote sustainable food systems. Case studies and field visits to local Danish solutions in different sectors of the food system are an integrated part of the course.
